Bibimbap Waffle = Bibimbaffle Sam Upgrade


This is actually an old post, however I would like to share it WITH THE WORLD. We had purchased a waffle maker a couple of years ago when a waffle party turned sour, WITHOUT A WAFFLE MAKER. Blasphemy.

Ahh yes, Bibimbap. My college food go to in Calgary’s Chinatown. Kimchi House is the best place to get them. The size of bowl is great and you can’t beat the price.

Now as you can see in this photo, the essential ingredients are missing. MISSING. What I know of bibimbap, it’s a crime to leave out beansprouts, so I decided to do it some Sam justice and waffle-ize it the way I would like it.



OHHHHH YEAAAAHHHHHH!!! Look at that red rice. Just how I like it. DELICIOUS! I will say that when I put the rice in the waffle maker, I had to add a bunch of oil so it wouldn’t stick, BUT it did create that lovely burnt crust of rice that stone bowls add to bibimbap.

If you have never tried Bibimbap, I highly encourage you to do so! Especially if you enjoy spicy food!

The Keto Thai Experience

Oh, the weight game. I feel like I always pull the card that makes you go two steps back. Of course it’s my own fault, but you know, birthdays, Christmas, people telling you to make food that no one else can make. Beh.

Anyways, to restart my atkins/low carb/keto adventure, I decided to try some new recipes. Good ol’ Google led me to a few new sites divvying out recipes for my easily bored palate.

I know that beets are not low carb AT ALL. They are the source of most of the sugar in North America, but I needed to use them up since they were sitting in the fridge for a week.

Honestly, I did not cook these verbatim. My biggest thing with these “thai” recipes that I had a problem with was the lack of fish sauce. I have never cooked or made any thai dish (other than desserts) that do not include fish sauce. Luckily being the filipino that I am, that stuff is readily available to me, and I added it as I saw fit. The only other change what that I used almonds instead of the peanuts in the Peanut Chicken as well as added coconut milk to fix the consistency. Knowing that I have an issue with peanuts (diet-wise, they oddly make me crave more food than I usually consume), I subbed them for slivered almonds in the processor.

I do believe variety is the key to a successful diet. Also, the ability to make vegetables taste delicious.

Steaky steak tacos


Don’t forget the hot sauce!

I just had a hankering for some non low carb food, especially the kind that you’re used to just making because you have no idea how to cook. Enter the era of when I first moved out to my own place. I remember buying jars of Classico pasta sauce, dry pasta, sidekicks, and frozen Delissio pizzas. Man. That was before my metabolism was a mess. I also remember making tacos for special nights, since there was so much prep and clean up involved. HA, little did I know that it would only get worse.

So here they are, in all their glory, my Steak Tacos, with all the regular fixins you would find in a regular taco, just… not as ghetto. Homemade salsa cruda, a recipe I found in an ancient second hand Mexican cooking book I found at the CBC book fair. The Complete Book of Mexican Cooking by Elisabeth Lambert Ortiz. The only other kicker is my petit beef tenderloins I purchased from CO-OP, rubbed in a homemade taco beef seasoning. Oregano, garlic powder, chili powder, hungarian paprika, salt and pepper. Other than that, grated cheese, lettuce, cilantro, sour cream, and oh yeah, a little douse of Tapacio Hot Sauce. Don’t forget, corn tortillas are the ONLY way to go.

Layering order unnecessary

SALSA CRUDA (adapted from The Complete Book of Mexican Cooking)

  • 2 large ripe tomatoes, seeded, chopped fine
  • 2 serrano chili peppers (i actually just used jalapenos)
  • 1 large onion, finely chopped
  • 1/4c  fresh cilantro, chopped
  • 2 cloves garlic, minced
  • pinch sugar
  • salt and pepper

Mix all ingredients and season to taste.

YUM! I found this great cooked in with scrambled eggs in the morning, or just with some plain tortilla chips.
